I've been having a blog for the last week or so, which is why I've had no new posts. Even with this post, which should be simple, I'm struggling to think of something to talk about - how to bloggers always seem to have something interesting to talk about on an almost daily basis?! So, I'm going to keep this post short - a simple post for a simple recipe. This sweet potato side dish is perfect for the cold miserable weather we've been having lately.
Tell me, have you ever suffered from writers block? How did you manage to get over it?
Roast Sweet Potatoes with Bacon2 Sweet Potatoes, chopped into cubes
2 Rashers of bacon
Thyme
Olive Oil
Salt and cracked pepper
Method
1. Preheat the oven to 200 degrees Celsius.
2. Place the sweet potato in a baking tray and drizzle lightly with olive oil. Sprinkle thyme, salt and cracked pepper and bacon over the top.
3. Bake in the preheated oven for 20 minutes. Remove the tray from the oven and turn the sweet potato. Return to the oven and bake for a further 20 minutes or until golden.
