Pioneer Woman's Whisky BBQ Sliders

It was my birthday on Saturday and I had the whole family - nieces, nephews, sisters, brothers-in-law and parents - over for lunch. This might sound weird to you guys but I actually ended up cooking my own lunch and cake - for me it was all about us eating what I wanted and plus cooking is something I love to do (I'm not sure if anyone's noticed that?) For lunch I decided to make these Whisky BBQ Sliders which I'd spotted on Pinterest a while ago and had been wanting to cook for ages. They were actually originally from The Pioneer Woman (as Spicy Whisky Sliders).
I've never actually had a slider before. I know it's really just a smaller version of a burger but the sauce on these sliders gave them a delicious flavour. I did leave out the jalapenos, but I'm sure they would have added a nice kick to them. I served mine with a very simple salad - Rocket & Parmesan Salad.
Ingredients:
900g mince beef
Salt & Pepper
4 tbsp butter
1 whole large onion, diced
1/2 cup whiskey
1 cup Barbecue Sauce
1/4 cup Jalapeno Slices (optional)
12 whole dinner rolls, or small rolls, split
Instructions:
1. Form the mince meat into 12(ish) small burger patties, and sprinkle with salt and pepper on both sides. Melt the butter in a frying pan over medium-high heat and cook the patties until done in the middle, approx 3-4 minutes per side. Remove the patties from the frying pan and set aside. Discard all but 2 tbsp of remaining grease before returning the frying pan to the stove.
2. Dice the onion and add to the frying pan, stirring until cooked, about 3 mins. Pour in the whiskey (make sure to turn off the stove if you're cooking with gas) and stir. Allow the whiskey to reduce by half, then stir in the jalapenos and barbecue sauce.
3. Reduce the heat of your stove to low and return the burger patties to the frying pan, turning to allow them to coat with the barbecue sauce. Allow the patties to simmer in the sauce until hot.
4. Place the patties on individual buns and spoon sauce and jalapenos over the top of each one.

  3. Happy Birthday Claire!! :D Ooh I love how saucy these are! Sometimes they're a bit dry but these don't look dry at all :D

  4. Thanks Lorraine :) I think the sauce did help, but I think they could easily have been a bit dry if they'd been overcooked. I'm so used to adding things to the mince in burgers that it was a little odd having all meat, but not bad :)
